Zesty Pineapple Mango Fruit Empanadas
Delicious fruit empanadas with a kick of orange zest.
Ingredients
8 fl oz (1 cup) DOLE Pineapple Juice
2 oz brown sugar
1 tsp ground cinnamon
2 fl oz lime juice
1 tsp orange zest
1/8 cup food starch
16 oz DOLE Chef-Ready Cuts Pineapple Cubes
8 oz DOLE Chef-Ready Cuts Mango Cubes
12 oz (4 separate circles) fresh pizza dough
Cinnamon Sugar
Directions
- Place first 6 ingredients in a saucepan and simmer over low heat until thickens.
- Add pineapple and mango and let cool.
- Place 3 oz. of pineapple-mango mixture into middle of pizza circle and brush the rim of the dough with egg wash. Repeat with remaining pizza circles.
- Fold dough over the mixture to form a half moon.
- Bake at 450ºF, 8 to 12 minutes or until lightly browned. Sprinkle with cinnamon sugar.
