Zesty Pineapple Mango Fruit Empanadas

8 fl oz (1 cup) DOLE Pineapple Juice

2 oz brown sugar

1 tsp ground cinnamon

2 fl oz lime juice

1 tsp orange zest

1/8 cup food starch

16 oz DOLE Chef-Ready Cuts Pineapple Cubes

8 oz DOLE Chef-Ready Cuts Mango Cubes

12 oz (4 separate circles) fresh pizza dough

Cinnamon Sugar

  1. Place first 6 ingredients in a saucepan and simmer over low heat until thickens.
  2. Add pineapple and mango and let cool.
  3. Place 3 oz. of pineapple-mango mixture into middle of pizza circle and brush the rim of the dough with egg wash.  Repeat with remaining pizza circles.
  4. Fold dough over the mixture to form a half moon.
  5. Bake at 450ºF, 8 to 12 minutes or until lightly browned.  Sprinkle with cinnamon sugar.
