Tropical Coconut Pizza Pie
A "pizza" made with tropical fruit.
Ingredients
3 lb. (6 cups) cream cheese with pineapple softened
1 oz. (1-½ cups) sugar
14.5 oz. (6 cups) frozen nondairy whipped topping thawed
10 oz. (3 cups) flaked coconut toasted
6 lb. 10 oz. (1 (#10) can) DOLE Tropical Fruit Salad drained
6 cups DOLE Chef-Ready Cuts Sliced Strawberries thawed
1 lb. (3 cups) kiwi peeled and sliced
fresh mint leaves
Directions
- Beat cream cheese and sugar until light and fluffy. Fold in whipped topping and coconut.
- Divide mixture into 6 equal portions. On wax paper coated 8-inch cake board rounds, spread out mixture, building sides up slightly. Freeze 4 hours until firm.
- Mix together tropical fruit salad, strawberries and kiwi.
- Cut frozen cream cheese coconut crust into eighths. Serve onto plate. Spoon on 1/3 cup fruit and garnish with additional coconut and mint leaves.
