Pineapple Mango Salsa
This is a tropical salsa which is great to go over grilled chicken or pork or serve with tortillas.
Ingredients
1 cup DOLE Chef-Ready Cuts Pineapple Cubes, partially thawed
1 cup DOLE Chef-Ready Cuts Mango Cubes, partially thawed
½ cup red bell pepper finely chopped
¼ cup green bell pepper finely chopped
1 tbsp green onion diced
1 tbsp fresh cilantro or parsley chopped
2 tsp jalapeno chiles chopped
1 tbsp lime juice
½ to 1 tsp grated lime peel
Directions
Combine pineapple chunks, mango chunks, bell peppers, onion, cilantro, chiles, lime juice and lime peel in small bowl. Serve salsa at room temperature or slightly chilled.
Variation: Serve salsa over grilled chicken breasts or fish fillets.
