Minty Tropical Salsa
A tropical fruit salsa that is seasoned with mint.
Ingredients
16 fl. oz. (2 cups) apple cider vinegar
1 cup sugar
1 tsp. crushed red pepper
1 tsp. red bell pepper chopped
2 cups frozen DOLE Mango Chunks partially thawed
2 cups frozen DOLE Tropical Gold Pineapple partially thawed
⅓ cup fresh mint leaves chopped
1 tsp. kosher salt
Directions
- Place first 4 ingredients in saucepan and simmer over low heat until slightly thickened.
- Place mango and pineapple in food processor container and pulse until fruit is coarsely chopped. Place in large bowl.
- Add cooled vinegar mixture, mint, and salt, stir well. Serve with grilled seafood or chicken.
