Pickled Peach Sopska Salad with Flatbread Points

A beautiful Balkan-inspired salad featuring pickled peaches and cucumbers, served over a bed of fresh vegetables and topped with feta and mint.

Pickled Peach Sopska Salad with Flatbread Points

Ingredients

1 cup apple cider vinegar

2 tsp black peppercorns

1 tsp coriander seeds

3 bay leaves

¼ tsp mustard seeds

2 cups DOLE® Chef-Ready Cuts Diced Peaches

1 cup cucumbers, diced

1 cup ice water

1 cup red peppers, diced and grilled

3 each tomatoes, diced

1 each medium white onion, diced

1 cup feta, crumbled

3 each flatbread, cut into triangle points

½ cup mint, chopped

Directions

  1. 1. In a small pot, bring vinegar, peppercorns, coriander, bay leaves and mustard seeds to a simmer.
  2. Remove from heat and add peaches and cucumbers. Wait 5 minutes and add ice water to cool.
  3. Combine red peppers, tomato, and onion and place on serving bowl. 
  4. Drain peaches and cucumbers and place on top.
  5. Add feta, garnish with mint and serve with warm pita triangles.
