Grilled Zucchini and Peach Shatta Vinaigrette Salad
Shatta (Lebanese hot sauce) combined with grilled zucchini and peaches tossed with mint, creates one amplified salad dish.
Ingredients
Grilled Zucchini and Peaches
¼ cup olive oil
4 ea zucchini, speared & seeded
1 Tbsp salt
4 cups DOLE® IQF Peach Slices
Peach Shatta Vinaigrette
1 cup olive oil
¼ cup garlic, minced
2 Tbsp lemon juice
1 Tbsp lemon zest
¼ cup Shatta hot sauce
3 Tbsp salt
3 Tbsp pepper
1 cup peach purée
Salad Build
3 cups mint, pulled
2 cups feta cheese
1 cup pistachios, shelled
Directions
Grilled Zucchini & Peaches
- Brush olive oil on both sides of zucchini and season with 1 Tbsp salt.
- Grill zucchini along with peaches over 400-degree grill for 2 minutes per side.
- Remove and allow to cool.
- Cut zucchini in 2-inch pieces.
Peach Shatta Vinaigrette
- To create vinaigrette, in a blender place olive oil, garlic, lemon juice, lemon zest, Shatta, salt and pepper and pulse for 30 seconds.
- Slowly add peach purée until incorporated.
Salad Build
- In a large bowl add mint, grilled peaches, zucchini, feta and pistachios. Pour half of vinaigrette over all ingredients and toss until coated.
- Serve with extra dressing on the side.
