Picadillo de Jackfruit

Ingredients

2 tbsp Olive Oil

3 cups DOLE Shredded Young Green Jackfruit in Brine

2 Onions, Diced

2 cloves Garlic, Minced

1 Red Bell Pepper, diced

1 Yellow bell Pepper, diced

1 cup Green Olives, sliced

1 cup Golden Raisins

1 #10 can tomatoes, crushed

2 tbsp Salt

2 tbsp Black Pepper

1 tbsp Oregano, dried

1 tbsp Paprika

1 tbsp Coriander

1 tbsp Cumin

½ cup Fresh Parsley, Chopped.

5 cups White Rice, Warm

¼ cup Green onions, finely chopped

Directions

  1. In a large sautee Pan heat oil over medium heat.
  2. Add Onion, Garlic and Jackfruit and cook for 5 minutes or until onions are soft.
  3. Add Peppers, olives, raisins, tomatoes and seasonings, except Parsley.
  4. Reduce heat to low and simmer for 30 minutes. Remove from heat and stir in parsley.
  5. Serve over Rice.
  6. Garnish with green onions.
