Picadillo de Jackfruit
Ingredients
2 tbsp Olive Oil
3 cups DOLE Shredded Young Green Jackfruit in Brine
2 Onions, Diced
2 cloves Garlic, Minced
1 Red Bell Pepper, diced
1 Yellow bell Pepper, diced
1 cup Green Olives, sliced
1 cup Golden Raisins
1 #10 can tomatoes, crushed
2 tbsp Salt
2 tbsp Black Pepper
1 tbsp Oregano, dried
1 tbsp Paprika
1 tbsp Coriander
1 tbsp Cumin
½ cup Fresh Parsley, Chopped.
5 cups White Rice, Warm
¼ cup Green onions, finely chopped
Directions
- In a large sautee Pan heat oil over medium heat.
- Add Onion, Garlic and Jackfruit and cook for 5 minutes or until onions are soft.
- Add Peppers, olives, raisins, tomatoes and seasonings, except Parsley.
- Reduce heat to low and simmer for 30 minutes. Remove from heat and stir in parsley.
- Serve over Rice.
- Garnish with green onions.
