Banana Lumpia with Ginger Honey Sauce

Sweet Filipino style egg rolls filled with bananas.

INGREDIENTS:

16 Lumpia wrappers
4 cups DOLE® Chef-Ready Cuts Sliced Bananas, thawed
2 cups vegetable oil
1 cup honey
1 tablespoon ground ginger

DIRECTIONS:

  1. Bring a large pot of water to a rapid boil. Using tongs, gently hold lumpia wrapper over boiling water to soften. 
  2. Shingle 1/4 cup of bananas in the center of each lumpia wrapper. 
  3. Fold top and bottom portion of wrapper over the shingled bananas. Turn and roll along the side until rolled tight. Brush end of lumpia wrapper with water to create seal. 
  4. Heat vegetable oil in large sauté pan over medium heat. In batches of four, place lumpia seam side down and fry until golden brown on each side (approximately 3 minutes.).
  5. Remove from pan and drain on a paper towel or wire rack prior to serving.
  6. Combine honey and ginger in a small saucepot and heat until bubbling.
  7. Remove from heat and allow to cool at room temperature.
  8. Place warm lumpia on desired plate or serving platter. Serve with a bowl of ginger honey for dipping.
