Strawberry Puree Mirror Glaze
A sweet strawberry mirror glaze for mousse cakes or cheesecakes.
Ingredients
1 ounce unlfavored gelatin
5 ounces water
11 ounces light corn syrup
1 ½ cups DOLE Chef-Ready Cuts Diced Strawberries, pureed
7 ounces sweetened condensed milk
11 ounces white chocolate finely chopped
½ to ¾ teaspoon red food coloring
Directions
- Sprinkle gelatin over water in a small bowl. Let stand for 5 minutes to soften and bloom.
- Combine corn syrup and strawberry puree in a medium saucepan. Bring to a boil.
- Remove from heat, add gelatin, stirring well. Thoroughly skim foam from surface.
- Add condensed milk, mixing well.
- Add white chocolate to a medium bowl. Pour strawberry mixture over chocolate and stir well until smooth. Ensure glaze reaches 95°F.
- Pour glaze into multiple bowls if creating multiple colors. Otherwise, add red food coloring and stir well.
- Allow glaze to cool at room temperature until it reaches 89.6°F. Pour glaze over a very cold or frozen cake.
- NOTE: Yields 4 cups.
