Easy Pineapple Chili
This is a quick chili to throw together and cook in less than an hour.
Ingredients
2 lb. lean ground beef
4 (2 lb.) onion chopped
2 red bell peppers chopped
2 tablespoons chili powder
2 teaspoons salt
1 can (16 oz.) stewed tomatoes undrained
1 can (15.5 oz.) kidney beans undrained
1 can (16 oz.) tomato sauce
16 oz. (4 cups) DOLE Chef-Ready Cuts Pineapple Cubes
to taste chipotle chili powder
Directions
- Heat large Dutch oven until hot over high heat. Add ground beef, and cook until barely pink, stirring constantly to break into small pieces. Stir in onions and bell pepper, cook until the meat has browned, and the onions have softened and turned translucent, about 5 minutes. Spoon off any excess fat.
- Add chili powder and salt; cook 2 minutes. Add stewed tomatoes, kidney beans, tomato sauce and pineapple cubes; Bring to a boil, then reduce heat to medium-low and simmer uncovered for 15 to 20 minutes, or until chili reaches desired consistency. Season with additional chili powder if desired.
