Classic Mandarin Orange Salad

Fresh spinach and a vinaigrette with juicy mandarin oranges.

4 oz. (1/2 cup) olive oil
3 tbsp. balsamic vinegar
1 tbsp. Dijon-style mustard
1/2 tsp. sea salt
1/2 tsp. ground black pepper
1 lb. DOLE® Spinach
16.3 oz. (1-3/4 cup) DOLE Mandarin Oranges, drained
6-1/2 oz. (1 cup) olives, drained and halved lengthwise
1/2 DOLE Red Onion, thinly sliced
2 oz. (1/2 cup) crumbled feta cheese


  1. Stir together oil, vinegar, mustard, salt and pepper.
  2. Combine spinach, mandarin oranges, olives and onion rings.
  3. Pour dressing over salad; toss to evenly coat.  Top with feta cheese.
