Ful Mudammes with Honey Glazed Spiced Peaches

A fruity twist to a traditional Middle Eastern dish.

2 pounds fava beans, canned, 3/4 cup liquid reserved
5 cloves roasted garlic
3/4 cup extra virgin olive oil
1/2 cup plus 1/3 cup dukkah spice blend, divided
1 tablespoon tahini
2 tablespoons chopped fresh cilantro
1 cup DOLE® Chef-Ready Cuts Diced Peaches, thawed
1/4 cup honey
1/2 tablespoon fresh lemon juice
2 8" rounds pita bread, toasted cut into triangles


  1. Cook fava beans, bean liquid, garlic, olive oil, 1/2 cup dukkah and tahini in a large mixing bowl, over medium heat. Cook mixture 7-8 minutes, stirring frequently, until beans are cooked and the mixture is fragrant.
  2. Transfer to a food processor and pulse until mixture is smooth. Hold warm for serving.
  3. Heat honey and peaches together in a small saute pan, over medium flame for 2-3 minutes, or until sticky and glossy looking.
  4. Stir in lemon juice and remaining 1/3 cup dukkah. Hold peaches hot for service.
  5. Scoop 1 cup of Ful Medammes into a serving vessel and top with 1/4 of glazed peaches. Garnish each serving with 1/2 tablespoon of chopped cilantro. Serve with toasted pita on the side.
