(2018 Pairings Recipe) A delicious Middle-Eastern inspired appetizer accented with cherries.
Ingredients
2 cups frozen DOLE Dark Sweet Cherries
½ cup plus 1 tablespoon water divided
2 tablespoons lemon juice
¼ cup granulated sugar
¼ teaspoon ground nutmeg
1 tablespoon cornstarch
32 ounces whole milk Greek yogurt
2 ounces chopped pistachios
2 ounces orange blossom honey
3 Flatbread pita 8 round cut into 18
Directions
- Combine cherries, 1/2 cup of water, lemon juice, sugar, and nutmeg in a medium-sized saucepot, over medium heat.
- Stir gently over medium heat until simmering. Allow to simmer for 15 minutes to break down cherries.
- Whisk cornstarch and remaining tablespoon of water in a small ramekin to form slurry. Stir corn starch slurry into cherry compote. Continue stirring until compote thickens (approximately 3 minutes).
- Remove from heat and transfer to heat-safe container. Hold refrigerated to cool until needed.
- Place Greek yogurt in a large serving bowl and top with cold cherry compote. Garnish with chopped pistachios and orange blossom honey. Serve alongside flatbread pita triangles.
