Dole Blackberry Cobbler with Blackberry Creme Fraiche

A delicious cobbler filled with blackberries and topped with blackberry creme.

INGREDIENTS:

1/4 cup butter
1-1/2 cups plus 2 tablespoons sugar, divided
1 cup self-rising flour
1 cup whole milk
3 cups frozen DOLE® Blackberries, divided
1/2 cup crème fraiche
1/2 cup DOLE Chef-Ready Frozen Blackberry Puree

DIRECTIONS:

  1. Combine butter and milk in a small saucepot and gently stir over medium heat until butter is melted. Remove from heat and transfer mixture to a medium-sized mixing bowl.
  2. Preheat oven to 350°F. Gradually whisk in self-rising flour and sugar until smooth and homogenous. 
  3. Carefully pour 1/2 cup of batter into individual ramekins and top each with 1/4 cup of thawed blackberries.
  4. Dust each ramekin with 2 teaspoons of sugar and place in oven. Bake until golden brown and cooked throughout (approximately 25 minutes).
  5. Whisk together creme fraiche, blackberry puree, and 1/4 cup sugar in a small mixing bowl until fully incorporated. Reserve covered and refrigerated until needed.
  6. Place a 2 oz. dollop of blackberry crème fraiche on each warm blackberry cobbler and garnish with ¼ cup of thawed Dole® IQF Blackberries. Serve immediately.
