Apple Tzatziki Bowl

A sharable dish with yogurt, apples, cucumber, seasoned with dill. Served with pita bread seasoned with za'atar for dipping.

INGREDIENTS:

1 quart plain Greek yogurt
1/3 cup grated, frozen DOLE® Sliced Apples, partially thawed
1/3 cup grated English cucumber, unpeeled
1/2 teaspoon garlic paste
2 tablespoons lemon juice
5 tablespoons extra virgin olive oil, divided
1/2 cup DOLE Chef-Ready Cuts Diced Apples
1/4 cup chopped fresh dill
1/2 tablespoon ground black pepper
1/2 tablespoon kosher salt
2 tablespoons za'atar
2 pita bread

DIRECTIONS:

  1. Combine yogurt, grated apples, cucumber, garlic, lemon juice and 2 tablespoons olive oil, in medium bowl.  Stir until blended.
  2. Stir in diced apples, dill, black pepper and salt, until thoroughly blended.
  3. Spoon into serving dish.  Cover; refrigerate at least 4 hours.
  4. Preheat oven to 450°F.  Line baking sheet with parchment paper.
  5. Stir together remaining 3 tablespoons olive oil and za'atar in small bowl.  Brush over pita bread and place on baking sheet.
  6. Bake 25 to 30 minutes or until golden brown.   Slice into thin pizza-style slices.
  7. Serve tzatziki with pita bread slices.
