Berry Coconut Chia Pudding Bowl
(2017 Pairings) A healthy and delicious overnight pudding with mixed berries and chocolate.
INGREDIENTS:
3 Tablespoons plus 1 teaspoon

chia seeds divided
|
3/4 cup
|
coconut milk
|
1/2 teaspoon
|
vanilla extract
|
2 teaspoons
|
flaked sweetened coconut divided
|
2 teaspoons
|
maple syrup
|
1/2 cup
|
frozen DOLE Mixed Berries divided
|
as needed
|
chopped dark chocolate for garnish
|
DIRECTIONS:
Mix 3 tablespoons of chia seeds with coconut milk, vanilla extract, 1 teaspoon of flaked coconut and maple syrup in a jar. Stir well and refrigerate overnight.
- Add remaining 1 teaspoon chia seeds and coconut to the pudding and stir well. Stir in half of the mixed berries.
- Spoon pudding and berry mixture into serving bowl and top with remaining berries. Garnish with chocolate. Drizzle additional maple syrup on top, if desired.
