Strawberry and Apple Tabbouleh

A twist on a classic Middle Eastern salad.

4 bunches fresh Italian parsley
1 bunch fresh mint
1/4 cup fine bulgur wheat
1/2 cup lemon juice, divided
1/2 cup extra virgin olive oil, divided
1 teaspoon salt
1/2 cup DOLE® Chef-Ready Cuts Diced Apples, partially thawed
1/2 cup DOLE Chef-Ready Cuts Diced Strawberries, partially thawed
1/2 cup Persian cucumber, diced
1/2 cup tomatoes, small dice and drained
1/2 cup white onion, minced
1/2 teaspoon Lebanese 7-Spice Blend (recipe below)


  1. Rinse all vegetables and dry very well. Trim parsley and mint and chop leaves finely.  Set aside.
  2. Combine bulgur, 1/4 cup lemon juice, 1/4 cup olive oil and salt together in a bowl.  Stir to mix.  Let stand for 5-10 mins.
  3. Add parsley, mint, apples, strawberries, cucumber, tomatoes, and onion to bulgur. Season with spices and remaining juice and oil. Toss to coat well. Serve immediately.
  4. Lebanese 7-Spice Blend: Combine equal parts of ground allspice, black pepper, ground cinnamon, ground cloves, ground nutmeg, fenugreek, and ground ginger.
