Mandarin and Toasted Coconut Fruit Salad

A delicious tropical fruit salad featuring dark sweet cherries, mandarin oranges, pineapple, and bananas.

INGREDIENTS:

2 tablespoons lime juice
1/4 cup cream of coconut
2 cups DOLE® Mandarin Oranges, drained
1 cup frozen DOLE Dark Sweet Cherries, partially thawed
1 cup frozen DOLE Tropical Gold® Pineapple Chunks, partially thawed
1 large DOLE Banana(s), peeled and sliced
1/2 cup sweetened flaked coconut, toasted

DIRECTIONS:

  1. Combine lime juice and cream of coconut in medium bowl.  Whisk to combine.
  2. Add mandarin oranges, cherries, pineapple, banana, and coconut to lime mixture.  Toss to combine.  Serve immediately.
