Papaya Quinoa Grilled Chicken Salad
Filling and sweet chicken salad.
INGREDIENTS:
1-1/4 cups

chopped fresh cilantro

1/2 cup
|
diced green onion divided

serrano chile minced
|
1/2 cup
|
lime juice
|
2 tbsp.
|
sugar
|
1 tsp.
|
salt
|
1/8 to 1/4 tsp.
|
cayenne pepper
|
1 pkg. (9 oz.)
|
spinach
|
1 can (10 oz.)
|
black beans rinsed and drained
|
1-1/2 cups
|
prepared quinoa
|
3 cups
|
frozen DOLE Papaya Chunks partially thawed
|

boneless skinless chicken breast sliced 14 thick
|
DIRECTIONS:
- Combine 1/4 cup chopped cilantro, 2 tablespoons green onions, Serrano chile, lime juice, sugar, salt and cayenne in small bowl; set aside.
- Arrange spinach, black beans, quinoa, papaya chunks, remaining cilantro and remaining green onions on dinner plates. Drizzle with desired amount of dressing.
- Arrange sliced, grilled chicken breast on top of salad. Top with additional cilantro, if desired.
