Papaya Quinoa Grilled Chicken Salad

Filling and sweet chicken salad.

1-1/4 cups chopped fresh cilantro
1/2 cup diced green onion, divided
1 serrano chile, minced
1/2 cup lime juice
2 tbsp. sugar
1 tsp. salt
1/8 to 1/4 tsp. cayenne pepper
1 pkg. (9 oz.) DOLE® Spinach
1 can (10 oz.) black beans, rinsed and drained
1-1/2 cups prepared quinoa
3 cups frozen DOLE Papaya Chunks, partially thawed
3 boneless skinless chicken breast sliced 1/4" thick


  1. Combine 1/4 cup chopped cilantro, 2 tablespoons green onions, Serrano chile, lime juice, sugar, salt and cayenne in small bowl; set aside.
  2. Arrange spinach, black beans, quinoa, papaya chunks, remaining cilantro and remaining green onions on dinner plates.  Drizzle with desired amount of dressing.
  3. Arrange sliced, grilled chicken breast on top of salad.  Top with additional cilantro, if desired.
