Mango Coconut Kale Salad

A healthful and tasty kale salad sweetened with mango.

INGREDIENTS:

4 cups kale finely sliced
1-1/2 tbsp. lemon juice
1 tbsp. olive oil
1/4 tsp salt
2 cups DOLE Chef-Ready Cuts Mango Cubes
1/4 cup unsweetened coconut flakes
1/4 cup cashews toasted and chopped
salt and ground black pepper to taste
1 tbsp honey

DIRECTIONS:

  1. Combine kale, lemon juice, olive oil and salt in large bowl.  Massage kale with hands until glossy green and soft.
  2. Stir in mango, coconut and cashews to kale; stir.  Season with salt and pepper.  Stir in honey.

    Tip: To make a main dish salad, add cooked bay shrimp.
