Curried Pasta Salad
Pasta salad flavored with curry.
Ingredients
2 quarts (1 lb. 8 oz.) uncooked corkscrew or bowtie pasta
1 #10 can (6 lb. 10 oz.) DOLE Tropical Fruit Salad
3 cups (1 lb. 8 oz.) fat-free mayonnaise
2 tablespoons (1 oz.) packed brown sugar
1 tablespoon curry powder
3 cups (12 oz.) DOLE Celery sliced
1-½ cups (4 oz.) DOLE Green Onions chopped
(optional) cooked chicken breast or turkey breast strips
Directions
- Cook pasta as package directs; drain.
- Drain tropical fruit salad; reserve 1 cup juice.
- Stir together reserved juice, mayonnaise, sugar and curry in large bowl.
- Add pasta, tropical fruit salad, celery and green onions to curry dressing; toss to evenly coat. Serve on lettuce lined plates and top with chicken or turkey strips, if desired.
