Blueberry Cranberry Chicken Salad

A fresh and fulfilling delicious salad.

INGREDIENTS:

4 cups cubed cooked chicken breast
3 cups frozen DOLE Blueberries partially thawed
2 cups dried cranberries
1 cup chopped celery
3/4 cup diced orange or red bell pepper
1/2 cup thinly sliced green onion
1 cup lemon lowfat yogurt
1/4 cup mayonnaise
1/2 teaspoon salt
6 oz. each (2 pkg.) butter lettuce leaves

DIRECTIONS:

  1. Combine chicken, blueberries, cranberries, celery, bell pepper and green onions in large bowl.

  2. Whisk together yogurt, mayonnaise and salt in small bowl.  Gently fold into chicken-fruit mixture; chill.
  3. Arrange lettuce on small plates and spoon chicken-fruit mixture over leaves.
