Santa Fe Chicken Pizza

This is a great Tex-mex style pizza.

1 lb. cooked chicken, pulled
1 cup enchilada sauce
1/2 cup water
1/2 teaspoon chili powder
1 tablespoon smoked paprika
2 tablespoons chopped fresh cilantro
1 teaspoon salt
1 (12-inch) pizza crust, par-baked
1/3 cup mesquite barbecue sauce
1/2 cup Monterey Jack cheese, shredded
1/2 cup shredded Cheddar cheese
1/2 cup mozzarella cheese, shredded
1/2 cup shredded chicken mixture, from recipe above
1 oz. black olives, sliced
1 oz. banana peppers, sliced
3 oz. DOLE® Pineapple Tidbits, drained
2 tablespoons green onions, thinly sliced


  1. Place first seven ingredients in small saucepan and simmer over low heat for 25 minutes.
  2. Remove from sauce pan and place in a mixing bowl and cool.  Shred and reserve.
  3. Spread sauce evenly over the crust.  Top with cheeses, chicken mixture, olives, peppers and pineapple tidbits.  Bake at 450ºF., 12 to 15 minutes.
  4. Garnish with green onions.
