Santa Fe Chicken Pizza

This is a great Tex-mex style pizza.

INGREDIENTS:

1 lb. cooked chicken pulled
1 cup enchilada sauce
1/2 cup water
1/2 teaspoon chili powder
1 tablespoon smoked paprika
2 tablespoons chopped fresh cilantro
1 teaspoon salt
1/3 cup mesquite barbecue sauce
1 (12-inch) pizza crust par-baked
1/2 cup Monterey Jack cheese shredded
1/2 cup shredded Cheddar cheese
1/2 cup mozzarella cheese shredded
1 oz. black olives sliced
1 oz. banana peppers sliced
3 oz. DOLE Pineapple Tidbits drained
2 tablespoons green onions thinly sliced

DIRECTIONS:

  1. Place first seven ingredients in small saucepan and simmer over low heat for 25 minutes.
  2. Remove from sauce pan and place in a mixing bowl and cool.  Shred and reserve.
  3. Spread barbecue sauce evenly over the crust.  Top with cheeses, 1/2 cup chicken mixture, olives, peppers and pineapple tidbits.  Bake at 450ºF, 12 to 15 minutes.
  4. Garnish with green onions.
