Santa Fe Chicken Pizza
This is a great Tex-mex style pizza.
Ingredients
1 lb. cooked chicken pulled
1 cup enchilada sauce
½ cup water
½ teaspoon chili powder
1 tablespoon smoked paprika
2 tablespoons chopped fresh cilantro
1 teaspoon salt
⅓ cup mesquite barbecue sauce
1 (12-inch) pizza crust par-baked
½ cup Monterey Jack cheese shredded
½ cup shredded Cheddar cheese
½ cup mozzarella cheese shredded
1 oz. black olives sliced
1 oz. banana peppers sliced
3 oz. DOLE Pineapple Tidbits drained
2 tablespoons green onions thinly sliced
Directions
- Place first seven ingredients in small saucepan and simmer over low heat for 25 minutes.
- Remove from sauce pan and place in a mixing bowl and cool. Shred and reserve.
- Spread barbecue sauce evenly over the crust. Top with cheeses, 1/2 cup chicken mixture, olives, peppers and pineapple tidbits. Bake at 450ºF, 12 to 15 minutes.
- Garnish with green onions.
