Grilled Southwest Chicken
This is a simple marinade which adds flavor to the chicken breast.
Ingredients
1 can (46 oz.) DOLE Pineapple Juice
4 oz. (½ cup) lime juice
4 oz. (½ cup) vegetable oil
4 teaspoons chili powder
4 teaspoons dried oregano leaves crushed
8 clove garlic finely chopped
14 lb. 45 each boneless skinless chicken breasts
Directions
- Combine pineapple juice, lime juice, oil, chili powder, oregano and garlic in shallow pan.
- Place chicken in pan, turn to coat. Cover, refrigerate and marinate 15 to 30 minutes.
- Grill chicken, brushing occasionally with marinade 20 to 25 minutes or until no longer pink in center. Discard remaining marinade.
