Peach Spice Scones

This is a fruity scone with peaches and cinnamon

Peach Spice Scones

Ingredients

2-¼ cups all-purpose flour

⅓ cup + 1 tablespoon sugar divided

2-¼ teaspoons baking powder

2-¼ teaspoons baking soda

¼ teaspoon salt

½ cup margarine softened

1 cup, diced DOLE Frozen Peach Slices thawed drained

½ cup lowfat milk

1 teaspoon vanilla extract

3 tablespoons chopped almonds

½ teaspoon ground cinnamon

milk or cream

Directions

  1. Combine flour, 1/3 cup sugar, baking powder, baking soda and salt in large bowl.
  2. Cut in margarine, using 2 knives or pastry blender, until mixture resembles coarse crumbs.
  3. Stir in peaches.  Combine 1/2 cup milk and vanilla extract.  Stir into peach mixture.  Form dough into a ball.
  4. Pat dough to 1/2 inch thickness on lightly flowered surface.  Cut into rounds with 2-1/2 inch biscuit cutter.  Place on baking sheet sprayed with cooking spray.
  5. Combine almonds, remaining 1 tablespoon sugar and cinnamon.  Brush tops of scones with milk or cream and sprinkle with cinnamon mixture. 
  6. Bake at 400ºF., 15 minutes or until lightly browned.  Serve warm.
