BBQ Jackfruit Salad with Avocado Lime Dressing
A savory salad packed with savory BBQ- marinated jackfruit, black beans, bell peppers, corn and jalapeños, topped with queso fresco and a creamy Avocado Lime Dressing.
Ingredients
4 cups DOLE® Shredded Young Green Jackfruit
1 cup BBQ sauce
1 cup DOLE Chef-Ready Cuts Diced Avocado
1 tsp fresh dill
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
1 tsp cilantro
⅓ cup non-dairy milk of choice
juice of one lime
1 bunch romaine, kale or other leafy green, chopped
½ green bell pepper, thinly sliced
½ red bell pepper, thinly sliced
1 (15 oz) can black beans, drained
1½ cups fresh or frozen corn
½ red onion, thinly sliced
4 scallions, chopped
1 jalapeño, thinly sliced, for garnish
queso fresco, for garnish
Directions
- Combine jackfruit and BBQ sauce in a saucepan. Heat over medium until warmed through.
- While the jackfruit is heating prepare the dressing. Combine avocado, dill, garlic powder, onion powder, salt, pepper, cilantro, dairy-free milk and lime juice to a blender or food processor and blend until smooth. Scrape down the sides as needed.
- In a large bowl, toss the greens with the avocado lime dressing. Arrange into 4 plates or bowls.
- Top with BBQ Jackfruit and remaining vegetables and black beans. Add sliced jalapeño and queso fresco for garnish.
