Caribbean Style Jackfruit and Plantains
A delicious combination of Caribbean flavors featuring sweet plantains and shredded jackfruit, served over cilantro rice.
Ingredients
1 Tbsp vegetable oil
1 cup DOLE Young Green Shredded Jackfruit
¼ cup onion, diced
1 each red chili, fine diced
1 cup Sliced Plantains
½ cup tomatoes, diced
½ cup chicken stock
2 Tbsp Worcestershire sauce
1 Tbsp salt
1 Tbsp pepper
1 cup rice
2 Tbsp cilantro, chopped
Directions
- Heat oil over medium heat in a saute pan for 30 seconds.
- Add jackfruit, onion, chilis, and plantains. Cook for 5 minutes, stirring often.
- Add tomatoes, chicken stock, Worcestershire, salt and pepper. Cook for 5 minutes over low heat.
- Fold cilantro into rice and distribute between two bowls. Top with jackfruit mixture to serve.
