(2021 Pairings – Kenya – Africa & the Middle East) - Steamed bananas that have been rolled in melted butter, covered with salted peanuts and pineapple chunks, and baked until caramelized. This sweet side is often served alongside Coupe Mount Kenya.

Ingredients

30 pieces Plantains cut in 1 2 half moon slices

8 oz. butter melted

8 oz. salted peanuts crushed

1 cup frozen DOLE Pineapple Chunks partially thawed

1 Tablespoon ground cinnamon

1 Tablespoon sugar

Directions

  1. Partially freeze plantains, or defrost partially. 
  2. Preheat oven to 425°F.

  3. Spray Cookie sheet. Place Plantains pieces in melted butter making sure completely coated.

  4. Remove plantains one at a time and roll in peanuts, then place on cookie sheet.

  5. Combine Cinnamon and sugar in small bowl and set aside.

  6. Place 1 pineapple chunk on each plantain. Sprinkle with the cinnamon sugar mix and bake for 10 minutes or until browned and warm thru.
