Strawberry Shrimp and Basil Pizza

This pizza combines the popular flavors of strawberry and basil with shrimp.

INGREDIENTS:

1/4 cup mayonnaise
1 tablespoon bottled pesto
1 pre-baked pizza crust (12-inch)
1-1/2 cups cooked and deveined rock shrimp
1/2 cup Parmesan cheese, grated
1 cup, partially thawed DOLE® Chef-Ready Cuts Diced Strawberries
1 to 2 tablespoons balsamic vinegar glaze*
garnish chopped fresh basil leaves

DIRECTIONS:

  1. Preheat oven to 400ºF.
  2. Mix together mayonnaise and pesto in small bowl.
  3. Spread mayonnaise mixture over pizza crust and place on pizza pan.  Arrange shrimp over pizza; sprinkle with Parmesan cheese.  Bake 10 to 13 minutes or until crisp and cheese melts.
  4. Sprinkle top with diced strawberries; drizzle with glaze.  Garnish with basil leaves, if desired.
  5. *  Balsamic Vinegar Glaze: Cook 1/4 cup balsamic vinegar in small saucepan over low heat until reduced by half.
