Dole Pineapple Jicama Salsa

16.3 oz. (2-1/4 cups) DOLE® Pineapple Tidbits, drained, juice reserved
3 cups jicama, chopped
1 red bell pepper, finely chopped
1/2 yellow bell pepper, finely chopped
1/2 red onion, finely chopped
1/2 bunch green onion, minced
2 tbsp. fresh mint, chopped
2 tbsp. chopped fresh oregano
1 tbsp. garlic, minced
1 tbsp. ginger root, minced
1 tbsp. kosher salt
1/2 tsp. chimayo chili powder


  1. Pour reserved juice into sauté pan.  Simmer juice to reduce and caramelize.  Cook juice until golden brown.  Chill.
  2. Combine pineapple tidbits, jicama, bell peppers, onions, mint, oregano, garlic, ginger, salt and chili powder in bowl.  Add chilled pineapple juice; toss to evenly coat.
