Avocado and Lima Bean Hummus

Avocado and Lima Bean Hummus

Ingredients

1 Tablespoon salt

2 cups frozen lima beans

1 cup frozen DOLE Chef-Ready Cuts Diced Avocado

¼ cup fresh lemon juice

2 Tablespoons minced garlic

⅓ cup + more to finish extra virgin olive oil divided

2 Tablespoons fresh mint leaves minced

Directions

  1. Fill a large saucepan ¾ full of lightly salted water and place over high heat. Once the water reaches a boil, add the frozen lima beans and cook for about 10 minutes, or until the lima beans are very soft but not completely mushy. 
  2. Drain the lima beans and rinse with cool water until the beans are room temperature. 
  3. Place the thawed avocado, lemon juice, and garlic into a food processor and process on high until very smooth, about a minute, making sure to scrape the sides of the processor. 
  4. Add half of the lima beans and continue processing on high speed while streaming in half of the olive oil. Once the olive oil is incorporated, add remaining beans while steaming in remaining olive oil. 
  5. If the mixture is still thick, taste and add more olive oil or lemon juice to thin to preference. Allow the hummus to blend on high speed for at least 5 minutes or longer until a silky smooth and airy texture is achieved. Remove from the food processor. 
  6. Place about 1/3 cup of hummus into a bowl, drizzle with finishing oil and a light sprinkle of fresh mint. Serve chilled alongside chips, carrots or preferred accompaniment.
