Spinach and Mandarin Pizza with Strawberry Balsamic Vinaigrette
A tasty vegetarian pizza.
Ingredients
5 tablespoons extra virgin olive oil divided
1 teaspoon Italian seasoning
2 tablespoons grated parmesan cheese
1 14 oz. (11-½ inch) prepared pizza crust
½ cup shredded mozzarella cheese
¼ cup thinly sliced red onion
1 cup baby spinach leaves
2 tablespoons crumbled goat cheese
¾ cup DOLE Mandarin Oranges drained
1-2 tablespoons Strawberry Balsamic Vinaigrette recipe below
¼ cup DOLE Chef-Ready Cuts Diced Strawberries, pureed
1 Tablespoon balsamic vinegar
½ teaspoon sugar
to taste salt and pepper
Directions
- Preheat oven to 450°F.
- Combine 3 tablespoons olive oil, Italian seasoning, and Parmesan cheese in small bowl. Brush mixture over crust.
- Sprinkle mozzarella cheese and onion over crust. Bake for 10 minutes.
- Top pizza with spinach, goat cheese, and mandarin oranges.
- Drizzle with Strawberry Balsamic Vinaigrette.
- Strawberry Balsamic Vinaigrette:Combine Strawberry Puree, balsamic vinegar, 2 tablespoons olive oil and sugar in a small bowl. Whisk to combine. Season to taste with salt and pepper.
