Spinach and Mandarin Pizza with Strawberry Balsamic Vinaigrette

A tasty vegetarian pizza.

5 tablespoons extra virgin olive oil divided
1 teaspoon Italian seasoning
2 tablespoons grated parmesan cheese
1 14 oz. (11-1/2 inch) prepared pizza crust
1/2 cup shredded mozzarella cheese
1/4 cup thinly sliced red onion
1 cup baby spinach leaves
2 tablespoons crumbled goat cheese
3/4 cup DOLE Mandarin Oranges drained
1-2 tablespoons Strawberry Balsamic Vinaigrette recipe below
1/4 cup DOLE Chef-Ready Strawberry Frozen Puree thawed
1 Tablespoon balsamic vinegar
1/2 teaspoon sugar
to taste salt and pepper


  1. Preheat oven to 450°F.
  2. Combine 3 tablespoons olive oil, Italian seasoning, and Parmesan cheese in small bowl.  Brush mixture over crust.
  3. Sprinkle mozzarella cheese and onion over crust.  Bake for 10 minutes.
  4. Top pizza with spinach, goat cheese, and mandarin oranges.
  5. Drizzle with Strawberry Balsamic Vinaigrette.
  6. Strawberry Balsamic Vinaigrette:
    Combine Strawberry Puree, balsamic vinegar, 2 tablespoons olive oil and sugar in a small bowl. Whisk to combine.  Season to taste with salt and pepper.
