Peach Hummus Bowl with Black Garlic and Basil
(2017 Pairings) A fruity hummus flavored with black garlic and basil.
INGREDIENTS:
3 cups

water
|
1 can (15 oz.)

garbanzo beans drained
|
1/2 cup
|
DOLE Chef-Ready Frozen Peach Puree divided
|
1 clove (or 1 teaspoon)
|
black garlic
|
1 tablespoon
|
chopped fresh basil
|
3 tablespoons
|
extra virgin olive oil
|
1 tablespoon
|
lemon juice
|
1/2 teaspoon
|
agave nectar
|
|
salt and pepper to taste
|
1/2 cup
|
DOLE Chef-Ready Cuts Diced Peaches partially thawed

DIRECTIONS:
- Combine water and garbanzo beans in a medium pot over medium-high heat. Bring to a boil, then reduce heat to simmer. Cook for 7 minutes.
- Drain beans and add to food processor with 7 tablespoons peach puree, garlic, basil, olive oil, lemon juice and agave nectar. Cover; process until smooth. Season to taste with salt and pepper.
- Fold in diced peaches and garnish with remaining 1 tablespoon peach puree.
