Mashed Cauliflower Bowl with Mango and Avocado

Creamy mashed cauliflower that is seasoned with avocado and mango, a great side dish.

INGREDIENTS:

1 medium cauliflower, cut into florets
1/3 cup grated parmesan cheese
1 tablespoon cream cheese, softened
2 garlic cloves
1/2 teaspoon salt
1/8 teaspoon ground black pepper
3 tablespoons unsalted butter
1 cup DOLE® Chef-Ready Cuts, Mango Cubes
1 avocado, peeled and diced

DIRECTIONS:

  1. Heat water to boiling in large pot, add florets cook 6 to 8 minutes or until tender.  Drain. 
  2. Place hot florets in food processor, add parmesan, cream cheese, garlic, salt, pepper, and butter.  Cover; blend until almost smooth. 
  3. Stir in mango and avocado.
