Pineapple Crustless Quiche Bowl

A tasty individual quiche with pineapple.

1-1/2 cups DOLE® Chef-Ready Cuts Pineapple Cubes, thawed and drained
3 egg(s), beaten
1 cup sour cream
1/2 cup prepared baking mix
3 tablespoons diced green chiles
1/2 teaspoon salt
1-1/2 cups shredded sharp cheddar cheese
6 slices bacon, cooked and crumbled
2 tablespoons chopped fresh parsley


  1. Preheat oven to 400°F. Reserve 1/2 cup pineapple for garnish. Spray four (8 oz.) oven-proof bowls with cooking spray.
  2. Combine eggs, sour cream, baking mix, chiles and salt until blended. Stir in remaining pineapple and cheese. Pour into bowls. Top with crumbled bacon.
  3. Bake 40 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Garnish with parsley and reserved pineapple.
