Jamaica Me Crazy

An infusion of pineapple, dark sweet cherries, Jamaican rum, and a hint of cacao.

INGREDIENTS:

2 ounces Jamaica Me Crazy infusion (recipe below)
1-1/2 ounces Fresh Sour Mix (recipe below)
1 ounce DOLE® Chef-Ready Cuts Diced Peaches, partially thawed
1 ounce DOLE Chef-Ready Cuts Mango Cubes, partially thawed
1 ounce DOLE Chef-Ready Cuts Pineapple Cubes, partially thawed
dash Aztec chocolate bitters

DIRECTIONS:

  1. Combine infusion, fresh sour mix, peaches, mango, and pineapple in a shaker with ice.  Shake vigorously and pour into glass.  Top with chocolate bitters.
  2. Jamaica Me Crazy infusion: Combine 1 cup frozen DOLE Dark Sweet Cherries, 1 cup DOLE Chef-Ready Cuts Pineapple Cubes, 2 cups Jamaican rum, and 2 ounces (by volume) cacao nibs in a large jar.  Cover; infuse for 48 hours and strain. 

  3. Fresh Sour Mix:  Combine 1 cup fresh lemon juice, 1 cup fresh lime juice, 1 cup water and 2 cups simple syrup (recipe below) in 1/2 gallon container.  Stir until well blended. Cover; store in refrigerator until ready to use. Makes 5 cups.
