Peach Cranberry Salsa

A great fruit salsa that can be served with tortilla chips or over turkey or chicken.

INGREDIENTS:

2 cups DOLE® Chef-Ready Cuts Diced Peaches, partially thawed
1 cup frozen DOLE Cranberries
1/2 cup green onions, thinly sliced
1/4 cup red bell pepper, diced
2 tablespoons lime juice
2 teaspoons jalapeno chili, minced
1 tablespoon chopped fresh cilantro
1/2 teaspoon fresh ginger, finely chopped
1/2 teaspoon finely chopped garlic
salt and ground black pepper to taste

DIRECTIONS:

  1. Combine all ingredients except salt and pepper in large mixing bowl.  Season to taste with salt and pepper.  Refrigerate for  1 hour before serving.
