Shrimp and Mandarin Ceviche
A zesty shrimp ceviche with mandarin oranges.
Ingredients
½ cup lime juice
⅓ cup lemon juice
¾ pound fresh medium sized shrimp peeled deveined
⅓ cup orange juice
1 tablespoon extra virgin olive oil
⅓ cup finely diced red onion
1 cup DOLE Mandarin Oranges drained
¼ cup frozen DOLE Chef-Ready Cuts Diced Avocado
pinch cayenne pepper
2 tablespoons chopped fresh cilantro
salt and pepper to taste
Directions
- Combine lime and lemon juice in a medium non-reactive bowl. Chop shrimp into 1/4-inch pieces and add to bowl. Cover and chill for 3 hours.
- Drain shrimp and reserve liquid. In a separate bowl, combine orange juice, olive oil, and 1 tablespoon of reserved liquid. Whisk to combine.
- Add red onion, mandarin oranges, avocado, cayenne pepper, and cilantro to shrimp mixture. Toss to combine. Season to taste with salt and pepper.
