Shrimp and Mandarin Ceviche

A zesty shrimp ceviche with mandarin oranges.

INGREDIENTS:

1/2 cup lime juice
1/3 cup lemon juice
3/4 pound fresh medium sized shrimp, peeled, deveined
1 tablespoon extra virgin olive oil
1/3 cup orange juice
1/3 cup finely diced red onion
1 cup DOLE® Mandarin Oranges, drained
1/2 avocado, peeled and diced
pinch cayenne pepper
2 tablespoons chopped fresh cilantro
salt and pepper, to taste

DIRECTIONS:

  1. Combine lime and lemon juice in a medium non-reactive bowl.  Chop shrimp into 1/4-inch pieces and add to bowl.  Cover and chill for 3 hours.
  2. Drain shrimp and reserve liquid.  In a separate bowl, combine orange juice, olive oil, and 1 tablespoon of reserved liquid.  Whisk to combine.
  3. Add red onion, mandarin oranges, avocado, cayenne pepper, and cilantro to shrimp mixture.  Toss to combine.  Season to taste with salt and pepper.
