Caribbean Pork Tenderloin and Apples
A flavorful roast pork tenderloin with an apple ginger sauce.
Ingredients
2 cups orange juice divided
¼ cup coarsely chopped fresh cilantro divided
1-½ tsp minced fresh ginger divided
4 cloves garlic finely chopped divided
1 lb. pork tenderloin trimmed
1-½ cups DOLE Chef-Ready Cuts Diced Apples partially thawed
2 Tbsp butter
Directions
- Preheat oven to 425°F.
- Combine 1 cup orange juice, 2 tablespoons cilantro, 1/2 teaspoon ginger and 2 cloves chopped garlic in shallow non-metallic dish. Add pork; turn to coat with marinade. Cover; refrigerate and marinate 15 minutes.
- Remove pork from marinade and roast on a baking sheet for 20 minutes or until internal temperature reaches 150°F.
- Heat butter in a sauce pan over medium heat. Saute remaining ginger, garlic and diced apples for 5 minutes.
- Add remaining orange juice and simmer until sauce is reduced by half. Stir in remaining cilantro. Serve sauce with pork.
