Caribbean Pork Tenderloin and Apples

A flavorful roast pork tenderloin with an apple ginger sauce.

2 cups orange juice, divided
1/4 cup coarsely chopped fresh cilantro, divided
1-1/2 teaspoons minced fresh ginger, divided
4 cloves garlic, finely chopped, divided
1 pound pork tenderloin, trimmed
1-1/2 cups DOLE® Chef-Ready Cuts Diced Apples, partially thawed
2 tablespoons butter


  1. Preheat oven to 425°F.
  2. Combine 1 cup orange juice, 2 tablespoons cilantro,1/2 teaspoon ginger and 2 cloves chopped garlic in shallow non-metallic dish.  Add pork; turn to coat with marinade. Cover; refrigerate and marinate 15 minutes.
  3. Remove pork from marinade and roast on a baking sheet for 20 minutes or until internal temperature reaches 150°F.
  4. Heat butter in a sauce pan over medium heat.  Saute remaining ginger, garlic, and diced apples for 5 minutes.
  5. Add remaining orange juice and simmer until sauce is reduced by half.  Stir in remaining cilantro.  Serve sauce with pork.
