Ingredients

3 Tbsp butter or margarine

½ cup packed brown sugar

3 cups DOLE Chef-Ready Cuts Sliced Bananas

1 eggs

½ cup granulated sugar

3 Tbsp vegetable oil

2 Tbsp milk

1 tsp vanilla extract

½ tsp grated orange peel

1 cup all-purpose flour

1 tsp baking powder

¾ tsp ground allspice

¼ tsp baking soda

1/8 tsp salt

Directions

  1. Preheat oven to 350°F.
  2. Melt butter in 9-inch cake pan.  Stir in brown sugar.
  3. Arrange 2 cups banana slices in single layer in brown sugar.  Place remaining 1 cup banana slices in blender or food processor with egg, granulated sugar, oil, milk, vanilla extract and orange peel.  Cover; blend until smooth.
  4. Combine dry ingredients in large bowl.  Add liquid mixture to dry mixture.  Stir until blended.  Pour batter over bananas in cake pan.
  5. Bake 30 minutes or until tooth pick inserted in center comes out clean.  Remove from oven.  Invert onto serving plate.  Serve warm or room temperature.  Garnish with whipped topping and a banana slice, if desired.
