Allspice Banana Cake

This bundt cake flavored with bananas, walnuts and allspice.

INGREDIENTS:

1-1/2 cups cake flour
1-1/2 teaspoons ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup butter, softened
1 cup packed brown sugar
2 tablespoons grated orange peel
12 oz. DOLE® Chef-Ready Cuts Sliced Bananas
1 cup chopped walnuts, toasted
1/3 cup powdered sugar
1 tablespoon lemon juice

DIRECTIONS:

  1. Preheat oven to 350°F.   Spray tube pan with cooking spray.
  2. Sift together, flour, allspice, cinnamon and salt set aside.
  3. Beat butter until light and creamy, in mixer.   Add brown sugar and beat until fluffy.
  4. Place bananas in blender or food processor.  Cover; blend until smooth.
  5. Alternately mix in banana  puree and  flour mixture into butter mixture.  Fold in orange peel and walnuts.  Pour into tube pan.
  6. Bake 30 to 40 minutes or until tooth pick inserted in center comes out clean.  Cool 15 minutes and remove from pan.  Cool completely.
  7. Combine powdered sugar and lemon juice in small bowl; whisk until completely combined.  Drizzle over cooled cake.
