Pineapple Chocolate Macaroons

This is a twist on the classic with the flavors of pineapple and chocolate.

4 oz. semi sweet chocolate chips
3 egg whites, room tempurature
3/4 cup sugar
1/4 teaspoon salt
1/4 cup cocoa powder
1 cup DOLE® Chef-Ready Cuts Pineapple Cubes, partially thawed
2-1/2 cups shredded coconut


  1. Preheat oven to 350°F.   Line baking sheet with parchment paper.
  2. Melt chocolate chips in double boiler; set aside.
  3. Whisk egg whites and slowly incorporate  sugar, and salt, in large mixing bowl. Mix in cocoa powder, until fully incorporated. Stir in melted chocolate.  Stir in pineapple and coconut making sure completely covered.
  4. Portion out using # 40 scoop macaroon mixture on prepared baking sheet, at least 2-inches apart. Bake 12 to 14 minutes or until macaroons are completely set.
  5. Remove macaroons on parchment paper to cooling rack. Let cool for 15 minutes. Gently remove to  wire rack, then let cool additional 45 minutes.
