Banana Coconut Soup
This soup is a great starter combining flavors of banana and coconut.
Ingredients
¼ cup green onions sliced
2 garlic cloves sliced
1 Tbsp canola oil
1-½ cups reduced sodium vegetable broth
½ cup coconut milk
¼ tsp sugar
¼ tsp ground black pepper
pinch ground cumin
salt to taste
2 cups DOLE Chef-Ready Cuts Sliced Bananas
2 Tbsp lime juice
1 Serrano chilies seeded and sliced thin
Directions
- Saute onions and garlic in oil in medium saucepan until tender 3 to 5 minutes.
- Add vegetable broth, coconut milk, sugar, pepper, cumin and salt; bring to a boil. Reduce heat; simmer 5 to 8 minutes. Cool slightly.
- Pour into blender or food processor. Add 1-3/4 cups banana slices, lime and Serrano chili. Cover; blend until smooth.
- Return soup mixture to saucepan; add remaining 1/4 cup banana slices; heat through. Garnish with toasted coconut, if desired.
