Ingredients

1 teaspoon vegetable oil

1-½ pounds boneless skinless chicken breast

1 small onion chopped

1 medium red bell pepper chopped

1 medium green bell pepper chopped

2 teaspoons garlic cloves chopped

½ teaspoon ground cumin

1 can (13.5 oz.) coconut milk

½ teaspoon hot sauce

1 cup DOLE Chef-Ready Cuts Sliced Bananas

¼ cup fresh cilantro chopped

as needed hot cooked rice

Directions

  1. Preheat oven to 425°F.  Spray 13x9-inch baking pan with cooking spray.
  2. Heat oil in skillet.  Saute chicken breasts to brown on both sides.
  3. Remove chicken breasts and set aside.  Add onion, bell peppers, garlic and cumin to skillet and saute until tender.
  4. Place chicken breasts, sautéed vegetables, coconut milk, hot sauce, banana slices, and cilantro in prepared baking pan.  Stir to combine.
  5. Bake 30 min. or until chicken is no longer pink in center.  Serve with rice.
