Carrot Rice Wraps with Cabbage and Cilantro

A light Asian-inspired dish.

INGREDIENTS:

4 spring roll wrappers
3 cups shredded napa cabbage
1 cup julienne-cut carrots
1 teaspoon chopped fresh cilantro leaves
1/4 cup Japanese salad dressing (recipe below)

DIRECTIONS:

  1. Prepare spring roll wrappers per package directions.
  2. Combine napa cabbage and carrots with salad dressing in a bowl.
  3. Lay prepared spring roll wrapper on a flat surface.   Place 1/2 cup to 2/3 cup of vegetable mixture in the center of the wrapper. Place cilantro on top. Take the back edge of the rice wrapper and fold it to the middle.  Fold the two side edges on top of the back edge and roll tightly. Allow to set for 5 minutes prior to serving.
  4. Japanese Dressing:

    Combine oil, vinegar, tamari sauce, sugar, ginger, and vegetable purees in a bowl.  Season to taste with salt and pepper.
