Bran Blueberry Maple Muffins

Ingredients

2 cups wheat bran

1 cup oat bran

1 cup whole wheat flour

2 teaspoons baking soda

1 teaspoon baking powder

½ teaspoon salt

2 large eggs

⅔ cup milk

⅔ cup plain yogurt

⅓ cup canola oil

⅔ cup maple syrup

1 teaspoon vanilla extract

1 cup frozen DOLE Blueberries thawed and drained

Directions

  1. Preheat oven to 375°F . Place oven rack in the middle of the oven.   Spray muffin pans with cooking spray.
  2. Combine wheat bran, oat bran, whole wheat flour, baking soda, baking powder, and salt in a large bowl and set aside. 
  3. Combine eggs, milk, yogurt, canola oil, maple syrup and vanilla in a small bowl and mix well.   Pour the wet ingredients into the dry ingredients and mix with a rubber spatula just until combined. 
  4. Add Blueberries and stir to combine. Generously fill muffin cups with batter.
  5. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean.  Cool muffins in pan 10 to 15 minutes, remove to wire rack.
