Bran Blueberry Maple Muffins
This is a good for you muffin which is great way to start off your day.
Ingredients
2 cups wheat bran
1 cup oat bran
1 cup whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
2 large eggs
⅔ cup milk
⅔ cup plain yogurt
⅓ cup canola oil
⅔ cup maple syrup
1 teaspoon vanilla extract
1 cup frozen DOLE Blueberries thawed and drained
Directions
- Preheat oven to 375°F . Place oven rack in the middle of the oven. Spray muffin pans with cooking spray.
- Combine wheat bran, oat bran, whole wheat flour, baking soda, baking powder, and salt in a large bowl and set aside.
- Combine eggs, milk, yogurt, canola oil, maple syrup and vanilla in a small bowl and mix well. Pour the wet ingredients into the dry ingredients and mix with a rubber spatula just until combined.
- Add Blueberries and stir to combine. Generously fill muffin cups with batter.
- Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool muffins in pan 10 to 15 minutes, remove to wire rack.
