Chilled Strawberry Soup with Basil Cream

Creamy cold strawberry soup with a drizzle of basil cream, good to serve as a dessert

INGREDIENTS:

3 cups DOLE® Chef-Ready Cuts Sliced Strawberries
1 cup orange juice
1 cup buttermilk
1/2 cup vanilla Greek yogurt
1 to 2 tablespoons honey
1/2 cup whipping cream
3/4 cup packed fresh basil leaves
1 tablespoon vanilla yogurt
2 teaspoons lemon juice

DIRECTIONS:

  1. Combine strawberries, orange juice, buttermilk 1/2 cup yogurt and honey in blender.  Cover; blend until smooth.  Chill until ready to serve.
  2. Combine whipping cream, basil, 1 tablespoon yogurt and lemon juice in blender.  Cover; blend until smooth.  Chill before serving.
  3. To serve:  Spoon strawberry soup into bowls, drizzle basil cream over soup and serve.
