Peach and Pecan Compote

This is a great side dish to serve by itself or compliment pork tenderloin, grilled sea bass or halibut.

INGREDIENTS:

1 teaspoon vegetable oil
1-1/2 cups DOLE Chef-Ready Cuts Diced Peaches part thawed
1/4 cup chopped pecans toasted
2 tablespoons rice vinegar
4 teaspoons pure cane syrup or agave nectar
1/2 teaspoon fresh thyme chopped
1/4 teaspoon dry Cajun seasoning
salt and ground black pepper to taste

DIRECTIONS:

  1. Heat oil in medium sauté pan over medium-high heat.  Saute peaches until softened.  Add pecans, rice vinegar, syrup, thyme, seasoning and simmer until mixture has slightly thickened.  Season with salt and pepper, to taste.
