Apple and Cheddar Hand Pie

This combines the sweet, tart flavor of apple with a sharp Cheddar cheese for a great snack or dessert.

2-1/2 cups DOLE® Chef-Ready Cuts Diced Apples, partially thawed
2 teaspoons fresh lemon juice
2 tablespoons packed light brown sugar
pinch ground nutmeg
pinch salt
2 tablespoons butter
2 tablespoons all-purpose flour
1 sheet frozen puff pastry, thawed
3/4 cup sharp Cheddar cheese, cubed
1 tablespoon water


  1. Preheat  oven to 425°F. Line baking sheet with parchment paper.
  2. Toss together apples and lemon juice. Stir in sugar, cinnamon, nutmeg, and salt until combined.  Melt butter in sauté pan, stir in apple mixture cook 7 to 10 minutes until apple juices release and apples are slightly softened.  Sprinkle flour over mixture. Cook for about 2 minutes. Remove from heat and cool.
  3. Roll out pastry sheet, on a lightly floured surface. With pizza wheel, cut pastry sheet into 6 squares.
  4. Add  cheese to cooled apple mixture. Spoon about 1/2 cup  apple mixture in the center of each pastry square, leaving a 1-inch border along the long sides. Carefully fold into triangle shape; crimp the ends together with fork to seal, and place on the prepared baking sheet. 
  5. Beat together egg and water to make an egg wash. With a pastry brush, lightly coat the outside of each square with the egg wash. Using a paring knife, make a vent in each triangle.
  6. Bake 20 to 25 minutes or until pastry has risen and golden brown.  If desired, slightly heat fig preserves and drizzle over pies.
