Pineapple Pistachio Parfait

A parfait of pineapple and pistachio.

INGREDIENTS:

2 oz. DOLE® Chef-Ready Cuts Pineapple Cubes, thawed
2 oz. vanilla Greek yogurt
1-1/4 oz. dark rum
1 oz. salted pistachios, shelled
1 oz. cream of coconut
1 oz. Fresh Sour Mix
6 mint leaves
1 glass of ice

DIRECTIONS:

  1. Combine pineapples, yogurt, rum, pistachios, cream of coconut, sour mix, mint, and ice in blender. Cover; blend until smooth. Pour into glass, garnish with pineapple leaf and additional pistachios, if desired.
